The Stockyards honors with a bronze statue the most famous black cowboy, Bill Pickett.

Pickett was an expert bulldogger, who developed a style of (yes!) biting the lip of the steer to immobilize it.

Pickett's style of bulldogging was, appropriately, called "lipping."
